Renee Erickson's cocktail bar at the Amazon Spheres, where the Seattle dog goes upscale: a seeded bun, whipped cream cheese, pickled red onion, jalapeño and a spoonful of salmon roe.

A Greenwood brewery whose kitchen is proudest of its hot dogs. The Seattle dog here gets cream cheese and caramelized onions with a hit of hoisin, and goes down well with an IPA on the mural-lined patio.

A late-night hot dog stand near Pike and Broadway that opens in the evening and runs past bar close. The dogs are split and grilled over the flame, then loaded with grilled onions and Philly cream cheese on a toasted bun, which is exactly what Capitol Hill wants at 1 am.

The first Un Bien, opened in 2015 on 15th Avenue NW by Julian and Lucas Lorenzo, sons of Paseo's founder, cooking from their father's recipes. The Caribbean roast here is the one that made Seattle argue about which shop does it best.

Un Bien's newest shop, a small takeout counter on West Galer Street in Queen Anne, with the same Caribbean roast pork sandwich the family makes in Ballard. A few window stools if you can't wait to get home.

The Lorenzo brothers' shop on Seaview Avenue, in the old Paseo spot facing Shilshole Bay, making their dad's Caribbean roast: marinated pork shoulder, caramelized onions, aioli, cilantro and pickled jalapeños on a toasted Macrina baguette.
