Every person gets their own ticket at the entrance, and each counter you visit marks what you ordered on it. At the carving counter, step up when a cutter waves you over and ask for pastrami on rye; they hand-slice it to order. If you'd rather sit and be served, head to the back of the room and ask for waiter service. The pastrami cures for about a month, and the deli has been on this Houston Street corner since 1917.
