A trailer behind Batch Craft Beer that cooks Central Texas barbecue with Louisiana flavors. The sandwich to get is the ham muffuletta: house-cured smoked ham, served hot with melted Swiss and a pickle spear on the toothpick holding it together. There's a brisket debris po'boy too.
The house signature is the Envie: chopped brisket topped with sliced boudin, pickles, onions, slaw and homemade pickled jalapeños. Sandwiches come dressed with pickles, onions and slaw unless you ask otherwise. It's only open Thursday through Sunday, until 9 on Fridays and Saturdays, and it won a Michelin Bib Gourmand seven months after opening.
