Kelvin and Angie Harris's place on Highway 67, which started out as a smoker by the road in Waxahachie. Kelvin cooks on a straight wood pit, and the chopped brisket sandwich comes on a buttered bun with plenty of spicy sauce.

When you order, they'll ask whether you want lean or fatty brisket. Say fatty. It's open Tuesday through Saturday and closes when the meat runs out, so lunchtime is the safe bet. It's about a half-hour drive south of downtown Dallas.
