About
East Baltimore's pit beef institution, cooked over charcoal since 1987. It started as a roadside shack on Pulaski Highway, next to what is now a gentlemen's club, and in 2023 moved into a bigger building right behind it, with high ceilings and TVs. The beef is cooked hot and fast, then sliced thin and rare.
Get it the way the regulars do: tiger sauce (Chaps' horseradish and mayo), raw onion and pickles, with BBQ sauce if you like, all on a soft potato roll. Pit turkey and ham come off the same fire, and lettuce, tomato and cheese are small add-ons. The old stand's address was 5801 Pulaski Highway; the new building behind it is 720 Mapleton Ave. It opens at 10:30 every day except Easter, Thanksgiving and Christmas, but closing times vary, so call ahead. There are also Chaps in Glen Burnie and Aberdeen.
