The Chopped Beef Sandwich: Dallas's Everyday Barbecue Lunch

Out-of-towners come to Texas for sliced brisket on butcher paper. But walk into one of Dallas's longtime barbecue joints at lunch and plenty of people at the counter are ordering something humbler: a chopped beef sandwich.

What it is

Smoked brisket, chopped on the cutting block into rough, bark-flecked pieces, piled on a warm bun, with barbecue sauce, dill pickle chips and raw white onion. Some places use Texas toast instead of a bun. Pickled jalapeños are a common extra.

It's cheap, filling and quick, which is why it's a working lunch rather than a weekend pilgrimage.

Chopped to order vs. scooped

Here's the one thing that separates a great chopped beef sandwich from a sad one. At many joints, the brisket is chopped ahead of time, mixed with sauce and kept warm in a steam table. Scoop that onto a bun and you get something closer to a sloppy joe.

The good version is chopped to order: a hunk of brisket cut off the whole piece, chopped on the block while you watch, and put straight onto the bread. Texas Monthly's barbecue editor, Daniel Vaughn, makes this the main test in his 2026 search for a great one. He also looks for plenty of bark, a good sauce, cold pickles, raw onion and a warm bun, ideally buttered and griddled.

How to order: if the brisket isn't chopped on the block by default, ask for it that way. If they ask lean or fatty, say fatty.

Where to get one

  • Sammy's Bar-B-Q, Uptown. A lunch-crowd favorite where the brisket is broken up on the block, never kept in a vat, and every sandwich gets about a third of a pound of meat. The warm sauce has bits of smoked brisket in it, and there are two kinds of dill pickle chips. Take some of each. Lunch only, Monday through Saturday.
  • Big Al's Smokehouse BBQ, near Love Field. Famous for ribs, and around for about 50 years. The chopped brisket comes on Texas toast. Ask for it chopped fresh on the block rather than from the steam table.
  • Harris Bar-B-Que, Cedar Hill. About half an hour south of downtown, and worth the drive. The sandwich comes on a buttered bun with plenty of spicy sauce. It's open Tuesday through Saturday and closes when the meat runs out, so go at lunch. Harris has posted a vacation closure from Nov 26 to Dec 4, 2026.

Make it a day

Sammy's is in Uptown and Big Al's is a short drive northwest, near Love Field. Do one for lunch and save the other for tomorrow. Two of these in one sitting is a nap waiting to happen.
